What is your favorite thing to do on a rainy day? It really isn't rainy here today but it is very overcast and humid. I love to bake when it is rainy so this morning I made this recipe. While it is for bread I made muffins.


Bob rated them as excellent and his new favorite zucchini muffin.

Now I am going to go do the next best thing to do on a cloudy, rainy day, STITCH!!!!

Chocolate Chip Zucchini Bread
Yields 2 loaves

Ingredients
• 3 cups all-purpose flour
• 2 cups sugar
• 2 cups zucchini, grated
• 1 cup semi-sweet chocolate chips
• 3/4 cup sour cream
• 3 large eggs
• 1 cup canola oil
• 1 1/2 teaspoon baking powder
• 1 teaspoon baking soda
• 1 1/2 teaspoons cinnamon
• 1/2 teaspoon ground nutmeg
• 1 teaspoon vanilla extract
• 3/4 teaspoon salt
Directions
1. Preheat oven to 350º and grease two loaf pans. (Or line with parchment paper.)
2. In a bowl, sift together flour, cinnamon, nutmeg, baking soda, baking powder and salt.
3. In a separate bowl, beat together the eggs, sour cream, oil, sugar and vanilla extract for 2 minutes, or until light and fluffy. Batter will be thick.
4. 1/3 cup at a time, add the dry ingredients to the wet ingredients. Mix well.
5. Gently fold the shredded zucchini and chocolate chips into the batter. Mix until just incorporated.
6. Pour batter equally into both loaf pans and bake for 50-60 minutes, or until a toothpick inserted in center comes out clean.
7. Remove from oven and let cool 10 minutes before removing to wire cooling rack.

I baked the muffins for 18-20 minutes. there were 30 muffins

It IS raining here !
My favourite thing to do on a rainy day is to read a good book ( accompanied with a purring cat beside me !).

I'm not much of a baker (dinner yes, baking like desserts no so much) so stitching and reading are my favorite things to do on rainy days and, oh yes, take a nice nap and watch the rain - especially thunder & lightening.

Well it rained pretty near all day here today. I didn't do anything different today than I do any other day, but I enjoy doing it and listening to the rain falling. It sounds so soothing to me. I love thunder and lightening storms. too. :D

Rainy days are made for reading or stitching, unless I am lucky enough to be babysitting for Sadie!
